Foodie Fridays spotlight local culinary experts in The Wellness Kitchen

Prairie Plate Restaurant, the Waverly, NE, farm-to-table eatery, and chef Renee Cornett kick off the new “Foodie Fridays” series September 15 in Campus Recreation's The Wellness Kitchen. Chef Cornett is known for creating fresh and inventive food pairings with pasture-raised meats and locally-sourced organic dairy and grains; 85% of her menu's fresh greens and vegetables are grown at Lakehouse Farm, the certified organic farm she co-owns with husband Jerry Cornett.

Foodie Fridays is a new once-a-month lunch event for Nebraska students to enjoy healthy creative eating and dining while experts teach them to recreate delicious recipes at home. Everyone from the novice cook and local foodies to seasoned chefs and food tourists can discover fantastic foods to savor. Jenna Ford, a graduate student from Red Wing, MN, is excited to attend a couple of the events, especially when the Nebraska Beef Council presents in October. “I’m really looking forward to learning some new, healthy recipes, “ says Ford.

A different foodie event is held the 3rd Friday each month from 11:45 a.m. to 12:15 p.m. in The Wellness Kitchen; cost is $10 per person for a made-from-scratch lunch, recipe cards, and tips and tricks from the local Nebraska experts.

Fall 2017 series dates:

  • September 15 | Prairie Plate Restaurant & chef Renee Cornett (farm-to-table cooking)
  • October 20 | Nebraska Beef Council with Mitch Rippe (easy lunches made w/ Nebraska-raised beef)
  • November 17 | Meals in a Jar with registered dietitian Amanda Robine (chicken taco salad in a jar)
  • December 15 | Midwest Dairy Association & Beth Bruck-Upton (milk and ice cream)
