Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
September 11 entrée choices
orders must be received by 11:59 p.m. September 6
- Southwest Chicken Cobb Salad | grilled chicken breasts, sweet corn, fresh vegetables, shredded cheese, crunchy tortilla strips, and Chipotle Lime Dressing come together to make this healthy and hearty salad for a dinner with amazing flavor and texture.
- Pork Banh Mi Bowls | ground pork served over rice noodles is a super easy and delicious dinner that everyone will enjoy.
- Vegan Sun-Dried Tomato Tahini and White Bean Pasta | this simple tahini pasta is rich, creamy, vegan, and delicious making it the perfect weeknight dinner recipe.
September 25 entrée choices
orders must be received by 11:59 p.m. September 20
- Harvest Skillet Chicken | this recipe will satisfy your taste buds in the best way, fulfill your desire for a nutritious meal, and leave you with only one skillet to clean up afterward.
- Sheet Pan Kielbasa, Cabbage, and Potatoes | potatoes, cabbage, smoked sausage, and a tangy mustard vinaigrette make this dish a total comfort.
- Vegan Moroccan Lentil Salad | infused with fragrant spices, crunchy celery, toasted almonds, dried apricots, and loads of fresh herbs, this is a healthy vegan salad that can be made ahead – perfect for midweek lunches.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
