Ready-to-go Meal Kits Now Offered Through Wellness Kitchen

The Wellness Kitchen is now offering ready-to-go meal kits the first Monday of each month. The service is called Meal Kit Mondays and each kit includes everything needed to prepare a delicious dinner in well under an hour. Participants provide only the tools, cooking spray and some minor chopping/mixing/baking to complete the meal.

MAY 7TH MENU (Pre-order by May 5)
• Oven Roasted Ratatouille
• Avocado Black Bean Enchiladas
• Coconut Jerk Peas w/ Pineapple Salsa

"Meal Kit Mondays are a cross between a fully-prepared frozen meal and a typical meal delivery service you may see online like 'Hello Fresh'," says Amanda Robine, Registered Dietitian and Wellness Services and Nutrition Education Coordinator for Campus Recreation. The difference between Meal Kit Mondays and other meal services is the low cost at less than $4 per serving. Additionally, three entree options are available each month and participants may order one, two or all three meals and multiples of the same meal.

Participants pre-order and pay for meals online and email Robine their preferred meal choices. They can then pick up their ready-to-go meals at the Recreation & Wellness Center on East Campus 4:30-5:30 p.m. on the first Monday of the month. Deadline for pre-orders is the 48 hours prior to pick-up.

Meal Kit Mondays started as a way to promote healthy eating despite a busy lifestyle, said Robine. It is likely the service will continue beyond the semester as they have been popular among UNL students, faculty and staff.
