While Joey Kaplan, ‘22 was in ENTR423 with Dr. Sam Nelson, he developed a business plan for an idea that grew into the current business he owns with his wife, Tyra Kaplan, ‘22. Cedar Creek Coffee & Art is a mobile espresso van that serves Omaha and surrounding areas, making the van a frequent vendor at farmer’s markets, corporate events, and more.
“The coffee van is a smaller scale version of the business we created in class and eventually pitched at the New Venture Competition. The atmosphere of creativity surrounding the entrepreneurship classes was amazing and the ideas and feedback we gained throughout the process were extremely helpful these last couple of years," said Kaplan.
