Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
March 4 entrée choices
orders must be received by 11:59 p.m. February 28
- Caprese Chicken Pasta | enjoy this unique pasta dish that perfectly marries the caprese flavors of mozzarella, tomatoes, basil, and a balsamic glaze.
- Turkey Burgers & Homemade Fries | America’s favorite –burger and fries, but with a turkey twist. Try this seasoned, juicy turkey burger paired with rosemary potato fries.
- Vegetarian Huevos Rancheros | jazz up some eggs and feel full and satisfied with this recipe combining sauteed vegetables, lime juice, spices, enchilada sauce, beans, and cheese.
March 25 entrée choices
orders must be received by 11:59 p.m. March 20
- Chicken Tortilla Soup | enjoy this warm and comforting chicken tortilla soup, which will leave you satisfied and with only one pot to clean up afterward.
- Korean Beef Quinoa Bowls | tired of the same few recipes in your cycle? Boost up a typical meal of beef and rice with this beef seasoned with Korean flavors served with a cauliflower and quinoa mixture.
- Vegetable Paella | create this vegan-friendly, colorful dish with a harmonious blend of spices, beans, vegetables, and rice.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
