Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
April 8 entrée choices
orders must be received by 11:59 p.m. April 4
- Cuban Ham & Bean Soup | enjoy this hearty soup made with ham, beans, brown rice, bell peppers, and onions in a wonderfully seasoned broth.
- Teriyaki Chicken Rice Bowl | whip up this nurturing rice bowl in 30 minutes with teriyaki glazed chicken, brown rice, and a side of vegetables.
- Vegetarian Tortilla Lasagna | this Tex–Mex inspired meal pairs black beans, cheese, and vegetables—zucchini, bell pepper, corn, and cilantro—layered between corn tortillas and cooked covered in enchilada sauce.
April 22 entrée choices
orders must be received by 11:59 p.m. April 17
- Thai Sweet Chili Chicken Stir Fry | chicken, Bok choy, and seasonings are served over sweet potato noodles and Thai sweet chili sauce in this easy and delicious dinner that everyone will enjoy.
- Cajun Shrimp Tacos | have dinner prepped and made in less than 45 minutes, with this seasoned shrimp paired with homemade corn and avocado salsa served in a tortilla.
- Vegetarian Roasted Chickpea Gyros | expand your palate with this gyro—crispy chickpeas, greens, and tomatoes—on a pita topped with homemade tzatziki sauce.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
