Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
April 3 entrée choices
orders must be received by 11:59 p.m. March 29
- Chicken Tortilla Soup | full of shredded chicken, corn, beans, and homemade tortilla strips, this soup is a meal in itself.
- Korean Beef Quinoa Bowl | the perfect quick, easy and healthy dinner recipe that also makes great leftovers.
- Veggie Tortilla Bake | this tortilla casserole is packed with veggies — onions, red pepper, corn, and zucchini — beans, herbs, and cheese, all combining to make a super flavorful vegetarian dinner.
April 17 entrée choices
orders must be received by 11:59 p.m. April 12
- Teriyaki Chicken Rice Bowls | a delicious chicken teriyaki served on a bed of rice and a side of slaw that will satisfy any tastebud.
- Cuban Ham and Bean Soup with Cilantro Lime Rice | this all-day slow-cooker recipe is wildly flavorful and extra hearty.
- Vegetarian Gumbo | contains all the flavor, spice, and heartiness of traditional gumbo but with lots of healthy plant-based ingredients.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
