Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
May 1 entrée choices

- Thai Sweet Chili Chicken Stir Fry | these easy pad see ew noodles feature thick rice noodles, chicken, and crisp vegetables coated in a rich, savory sauce to give you a burst of flavor in every bite.
- Cajun Shrimp Tacos | blackened Cajun shrimp tacos with avocado salsa are made with so many fresh ingredients, and the blackened cajun shrimp takes it to the next level with flavor.
- Vegetable Paella | using white beans as a source of protein, this recipe will be sure to impress all your dinner guest.
May 22 entrée choices
orders must be received by 11:59 p.m. May 17
- Harissa Chicken and Beans | a tasty take on a Moroccan-style dish.
- Mongolian Turkey and Veggie Skewers | a deliciously easy turkey and veggie skewer in a spicy sweet Mongolian sauce that the whole family will love.
- Huevos Rancheros | a traditionally Mexican-style breakfast that makes the perfect vegetarian meal.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
