Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make mealtime easier for students and members of the campus community.
November 13 entrée choices
orders must be received by 11:59 p.m. November 8
- Chicken, Spinach, and Artichoke Pasta Bake | delight in a healthier twist on a classic comfort food. Tender chicken, vibrant spinach and artichoke hearts baked into a creamy pasta dish that is as nourishing as it is delicious.
- Winter White Chili | a heartwarming bowl of flavor featuring chorizo sausage, white beans, and a blend of aromatic spices like cumin, coriander, and chili powder. Perfect for a quick, satisfying meal on “chili” days.
- Vegan Rainbow Quinoa Salad | enjoy an explosion of colors and flavors in this vegan-friendly option for salad lovers including quinoa, crisp apples, buttery beans, eggplant, and almonds, all tossed in a zesty balsamic vinaigrette.
December 4 entrée choices
orders must be received by 11:59 p.m. November 29
- Butternut Squash Butter Chicken | indulge in an enticing fusion of tender chicken thighs, roasted butternut squash, and white beans, all simmered in rich, buttery tomato sauce.
- Egg Roll Skillet | Asian-inspired egg roll skillet dish in just 30 minutes! Ground beef, cabbage, and carrots sizzle in a fragrant blend of spices and sauce, topped with crispy wonton strips.
- Vegan Chickpea and Quinoa Tabbouleh | create this delicious and easy-to-prepare vegan dish with ease. Quinoa, chickpeas, and a refreshing mix of parsley, tomatoes, and mint come together in a Middle Eastern-inspired delight.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
