Available on select Mondays each month at the Rec & Wellness Center, the Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $15 pre-packed kits make mealtime easier for students and members of the campus community.
September 12 entrée choices
orders must be received by 11:59 p.m. September 7
- Sheet Pan Sausage Burrito Bowls | easy and healthy sheet pan burrito bowl recipe made with classic Mexican spices.
- Buffalo Chicken Stuffed Peppers | bell pepper halves are stuffed with a buffalo chicken mixture using a shredded rotisserie chicken, jasmine rice and lots of buffalo hot sauce.
- Baked Peanut Tofu Bowls | vegan, gluten-free baked peanut tofu buddha bowl smothered in the most delicious peanut sauce.
September 26 entrée choices
orders must be received by 11:59 p.m. September 21
- Deconstructed Chicken Pot Pie | nutrient-packed veggies are combined with chicken, a creamy sauce, and topped with flakey biscuits.
- Mini Taco Pizzas | a healthy, fun twist on pizza that you're going to love - you can freeze these mini pizzas for work too.
- Vegetarian Chow Mein | vegetarian Chow Mein offering plenty of veggies and an addictive savory sauce.
Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
